WHAT TO DO + HOW TO DO
Sautéed Spinach and Onions:
In a pan, sauté the onions until translucent.
Add spinach and cook until wilted. Season with salt to taste.
Poached Eggs:
Fill a pot with water and bring to a simmer.
Add a splash of vinegar to the water to help the eggs coagulate.
Crack each egg into a small bowl.
Create a gentle whirlpool in the water with a spoon.
Carefully slide one egg at a time into the center of the whirlpool.
Let the eggs cook for about 3-4 minutes until the whites are set but the yolks are still runny.
Remove the eggs with a slotted spoon and set aside.
THE INGREDIENTS
2 eggs
240 ml (1 cup) yogurt (mixed with garlic, salt, and dry mint)
100 g spinach, sautéed
75 g onions, sautéed
30 g (2 tablespoons) butter
1 teaspoon red pepper flakes or paprika
Salt to taste
Fresh dill, mint, coriander (optional), and chopped parsley for garnish
Let’s Assemble!
Spread the yogurt mixture on a plate.
Place the sautéed spinach and onions in the middle.
Add the poached eggs on top of the spinach and onions.
In a small pan, melt the butter and add the red pepper flakes or paprika, then drizzle this spicy butter sauce over the eggs and yogurt.
Finish with fresh dill, mint, coriander (if desired), and chopped parsley.
