WHAT TO DO                                                                                                                                                                                                           

If you want to make the dough/ phyllo sheets yourself—it is super easy! Here are the ingredients to get about 30 pieces. 

  • 1 kg flour
  • one tablespoon salt
  • water

Mix the flour and salt and knead a dough that is neither hard nor soft. We form small meringues from the dough. I made the meringues small because my tray is small. You can take it according to the size of your tray. We roll out the meringues in the form of thin phyllo. After rolling out the phyllo, put one of the phyllo sheets on the tray; after it is cooked, put the other phyllo sheet on top and turn it. We place another phyllo on top of the turned phyllo and continue until the phyllo is finished. After cooking, we separate the phyllo sheets from each other.

After separating the phyllo sheets, we water them one by one, let them rest for 5 minutes and fold them.

 

THE INGREDIENTS

  • 10 phyllo sheets 
  • 600 g caramelized onions
  • 15 g allspice ground
  • 50 g plant-based butter
  • 20 ml extra virgin olive oil
  • 5 g nigella seed
  • 50 g walnuts
  • 150 g plant-based yoghurt
  • coriander
  • 5 g sumac
  • 5 g sweet red chilli flakes
  • 5 g dried mint

HOW TO DO

Mix your olive oil and plant-based butter together. Lightly grease the whole phyllo with a brush. Spread the caramelized onions lengthwise on the bottom of the phyllo sheet, close the sides about 2 cm to prevent stuffing to come out and roll your sheet loosely then twirl, and wrap it into a roll to create a rose shape. Brush them with the oil mixture and add nigella seeds on top. Preheated oven to 180 degrees bake for about 8 to 10 minutes.

When you serve—Add a full spoon of yoghurt, sumac, red chilli flakes, dried mint, a drizzle of olive oil, a few leaves of coriander and chopped walnuts on top. Enjoy it chaps and pals 🤍
