Vegan Lunch Restaurant Amsterdam

what you need:
200 gr brown rice
100 gr rice noodles
750 ml water
20 gr dried wakame + 200 gr tofu, out into cubes
6 baby cucumbers, sliced
2 sheets nori, finely shredded
coriander (cilantro), to serve
1 lime, zest
20 gr ginger, chopped
2 table spoons of sesame oil
wasabi, tamari, mirin, vinegar (amount is subject to your decision)

what you do:
place the rice and noodles (separately) water and half the wakame in a medium saucepan over high heat. bring to boil, cover with a lid and reduce heat to low. cook for 20-25 minutes or until almost tender. soak. drain and set aside. while the wakame is soaking make the wasabi dressing. place the wasabi, tamari, mirin, lime zest, sesame oil, ginger and vinegar in a small bowl and stir to combine. set aside. place the tofu, cucumber and half the dressing in a large bowl and toss to combine. divide the rice, noodles wakame, nori, sesame and coriander to serve.
